Traveling in Abruzzo in autumn, among ancient villages and medieval fortresses, one can see long, wide expanses dotted with pinkish-purple mottles mottled with purple-red, covering the ground in neat rows.

Pallotte

The recipe for pallotte cacio e ova is typical of this wonderful land that is Abruzzo. A special region that encompasses all the good that can be found in the sea and on the land. Pallotte cacio e ova is a dish that really brings out the earth: made with simple, everyday ingredients, they look like meatballs but are meatless. The dough consists of stale bread, eggs and cheese mainly, suggesting that they originated as a salvage recipe. Once cooked, they are tossed in a tomato sauce that enhances the flavor. In the mouth there is a real explosion of flavor that conquers even the most difficult palates.

Vastese brodetto

Unlike other typical Adriatic fish broths, no sautéing is used in Vasto’s brodetto, nor is water, broth or vinegar added, making preparation simpler.

An additional difference is that the fish is cooked whole and not in pieces (except for some types that must necessarily be sliced, but only for reasons of space), and in no case are potatoes added.

It is customary to bring toast to the table separately, in some cases flavored with simple extra virgin olive oil or garlic rubbed on it.

bocconotti abruzzesi

Abruzzo bocconotti are delicious pastries that can be found mostly in Abruzzo bakeries and pastry shops.

The story goes that a maid wanted to make her master happy, who had a great sweet tooth and also loved coffee, which had recently arrived in Italy. For this reason she invented a cake made with a pastry shell that looked like a cup and inside it she put a filling of chocolate and almonds, and with a delicious hint of cinnamon.

The master liked it very much, and since then the recipe for bocconotti has remained more or less the same.

Arrosticini (also called rustell', rustelle, arrustelle in various Abruzzi dialects) are skewers of sheep meat typical of the Apennines, particularly Abruzzi cuisine

Arrosticini are included in the list of Traditional Italian Food Products (P.A.T.) of the Ministry of Agricultural Food and Forestry Policies.
